Dad’s Best Pork Chops

2 medium tomatoes, chopped
1/4 cup chopped onion
3 Tbsp. minced fresh mint
1 jalapeno pepper, chopped
2 Tbsp. key lime juice
1-1/2 tsp. minced fresh rosemary
4 pork loin chops (3/4 inch thick – bone-in, or boneless)
1/4 tsp. salt
1/4 tsp. pepper

1. In a small bowl, combine the first six ingredients.  Chill until serving.
2. Sprinkle pork chops with salt and pepper.  Grill chops, covered, over medium heat or broil 4 inches from the heat for 4-5 minutes on each side or until a meat thermometer reads 160 degrees.  Serve with salsa.

6 b0neless pork chops
1 tbsp. veggie oil
1 pkg. stuffing mix
1 can apple pie filling

Brown pork chops in oil.  Make stuffing according to package.  Put pie filling in 9×13″ greased pan.  Put pork chops on pie filling.  Spoon stuffing on top.  Cover pan.  Bake 350 degrees for 35 to 40 minutes.  Uncover, cook 10 minutes more.
